Meet our NEW Dietary Manager – Chef

ROY WIESER

Roy has a wonderful spirit. I discovered that about Roy within moments of our interview. Roy has a level of patience most aspire to hold.  What led me to this conclusion? You see, Roy grew up with ten sisters and three brothers. Can you imagine that household at mealtime?!  There is no doubt his childhood directly impacted his gift of loving others through preparing great food.

Roy says that food preparation helped him during the turbulent teen years. As he worked with his own hands, cooking steered Roy to enjoy accomplishing set goals. Cooking also tapped into his natural born creativity.

Given that Roy was used to a busy home life, it isn’t surprising that the foundation of his kitchen work is the skill of teaching. After years of working his way up from Sous Chef to Chef, he gravitated towards teaching cooking skills to at-risk-youth. For two decades, Roy taught troubled kids the art of cooking. He says that the classes were really about educating and supporting  kids in basic life-skills .

While speaking to Roy, I learned that the company he works for, Sodexo, has a tremendous compassion and devotion to both youth and senior care. Here at Columbia Lutheran Home, we are glad to contract with a compassionate company like Sodexo which in turns gifts us with an accomplished Chef like Roy.

I asked Roy what his top goals are for the CLH kitchen. He immediately listed out what he considers to be his priorities:

  1. Quality Food – Roy states that he insists on fresh food with great flavor – even the puree that many Residents eat. His kitchen is using more herbs and always working to reduce salt. According to Roy, healthy food doesn’t mean food without flavor.
  2. A strong kitchen staff – Roy is building a great team of cooks and kitchen assistants. He is engaging them one-on-one and of course using his best skill: teaching!
  3. Certified Dietary Manager – As part of his 2019 goals, Roy is taking online courses to gain his Certification as a Dietary Manager in elder care.
  4. Individual Resident Dietary Needs – Roy states that he intends on serving each Resident individually. This includes meeting with Resident, Family, and staff in order to discern those needs.

For one hundred years, our mission at Columbia Lutheran Home has been the care of aging adults:

Body, Mind and Spirit.

With Roy as our new Chef we know that we are fulfilling our mission!
